Doking jam

Now it’s time to cook. Heat up the mixture on low to medium heat, stirring occasionally so nothing burns into pot. If you have a little more time, keep mixing with sugar until the berries begin to release juicy sugars. Continue 25 kg fructose syrup cooking up the combination for around 20 to 30 minutes. You can test to see if the jam has boiled long enough by running a spoon through and seeing if it sticks together, or whether your finger leaves a clear line behind. When you think it is thick enough take off the heat and allow cooling before placing in a jar with lid for storage. Not as well-known and popular with strawberries or blueberries, but definitely a berry to try. Maui berries are tiny, incredibly deep‐purple berries with an extreme tart / sour taste that mixes wonderfully in sugars and citrus flavors. And they are good for you because of the vitamins and antioxidants. If you have not previously eaten dock berries, you can find them in the wild or enquire whether your local farmer's market stocks any. Some of their flavors you might even end up loving.
