Mango jam requires two things, first the basic thing for all mango lovers, is lots of ripe sweet Mangoes. About six big or eight smaller ripe mangoes will be enough to make a nice batch of jam. Notes be sure to select ripe mangoes is key! This means the rays should be in their ideal setting and not too hard nor to soft. The way to tell if a mango is ripe, oh so gently press it with your finger tips. It should be just slightly soft (it gives a bit when you press it) but not too soft/partially mushy — perfect for making jam!
For the jam: peel and finely dice all your mangoes This can be done with a sharp knife, but if you are not used to chopping up fruits and veggies it's best to always ask an adult for some assistance. Cut mangoes into small pieces and put in a pot. Then sugar and a dash of lemon juice. Sugar helps the mango to be sweet in taste and turn them into a jam whereas lemon juice neutralizes all heavy flavours & also acts as preservatives for this Jam.
Once you have put everything in the pot, it's time to cook up that mango mash on the stove. Once it cooks for some time, you will notice the jam starting to thicken and achieve consistency It should be done when it is thick and you are able to top the back of a spoon with it. At that stage switch off the flame and allow jam to cool for few minutes. Then portion the jam into sterilised jars. Also cool the jars completely before placing lids on to prevent them from going bad.
After you have filled your jars with the mango jam add them and use! Mango jam can be good with toast, bagels, croissants and pancakes. And it also tastes well over plain yogurt or vanilla ice cream too. You might also edit the recipe and use mango jam as a cake or cupcake filling for something new.
